This Pancake Day we're urging you to get creative in the kitchen and try these Lemon Drizzle Style Pancakes made using our Victorian Lemonade!
Fluffy, zesty and delicious. Perfect for either a fancy breakfast dish or a flashy evening dessert.
Lemon Drizzle Style Sauce:
100g of icing sugar
100ml of Fentimans Victorian Lemonade
240g of self-raising flour
2 tbsp of caster sugar
190ml of Fentimans Victorian Lemonade
1. Create your sauce first, add the icing sugar and Victorian Lemonade together and gently mix together. Set this to one side.
2. Next, sieve the flour and add the caster sugar to the bowl, create a little well and add in the egg and Victorian Lemonade - beat until you have a smooth mixture with no lumps.
3. Next, add a tbsp of oil to a frying pan and set on a high heat. Reduce the heat and add a ladle of the mixture in to the pan. When you get small air bubbles appearing on the top of the pancake flip the pancake to cook the other side. Repeat.
4. Once you have cooked all the mixture arrange your pancakes into a stack, pour over your Lemon Drizzle Style Sauce and enjoy!
